During my ride across western Louisiana, I passed a large number of rice paddies, some flooded and some not. I learned that rice farmers rotate their rice fields with a crop that crawls: crawfish. The crawfish grow well in these fields and prep the soil for the next rice crop. And in my opinion, produce great meat.

After a long morning riding by the fields, I stopped for a crawfish burger at a little cafe in Mamou LA. It was a fabulous lunch, and the only thing that would have made the patty of crawfish, breadcrumbs, and spices even better would have been if the texture was a bit firmer. EDGE Ingredients activated fibers could provide a firmer bite, and I am going to start working on that application as soon as I can!!
